Simple Chaffles

Low carb "bread" made from egg and cheese in a waffle maker. Perfect for sandwiches.

Simple Chaffles

When I first cut back on carbs, bread was the thing I missed the most. So I started experimenting with low carb alternatives, and chaffles won. They're made from just egg and cheese in a waffle maker, and they're sturdy enough to hold a proper sandwich.

Serves2 mini chaffles (1 sandwich)

Ingredients

  • 1 egg
  • 50 g (½ cup) shredded mozzarella
  • 1 tbsp almond flour

How to make it

  1. Heat up your mini waffle maker.
  2. Whisk the egg in a bowl, then stir in the mozzarella and almond flour.
  3. Pour half the batter into the waffle maker and cook for 3 to 4 minutes, until golden and firm.
  4. Repeat with the rest of the batter.
  5. Let the chaffles cool for a minute on a rack so they firm up.

Tips

This makes 2 chaffles in a mini waffle maker. Make a double batch and keep them in the fridge, or freeze them and crisp them in the toaster.

Swaps

Cheddar instead of mozzarella makes them hold together even better.
