This is one of those meals I keep coming back to. The dressing is the star: creamy Greek yogurt with crispy bacon, ham and fresh chives. Make a big bowl of whatever salad vegetables you like and pour it over.

Ingredients

  • 1 l (4 cups) Greek yogurt
  • 150 g (5 oz) bacon bits
  • 300 g (10 oz) ham, cut in strips
  • Chives, chopped, as much as you like
  • 1 head of iceberg lettuce
  • 500 g (1 lb) tomatoes
  • 1 cucumber
  • Red bell peppers
  • Peanuts (optional)

How to make it

  1. Fry the bacon until crispy, then let it cool.
  2. Stir the bacon into the Greek yogurt, along with the fat from the pan.
  3. Add the ham and the chives and mix well.
  4. Make the salad: chop the iceberg, tomatoes, cucumber and red bell peppers, or whatever vegetables you like.
  5. Serve the salad with the dressing on top.

Tips

Add any salad vegetables you like. I sometimes sprinkle peanuts on top for extra crunch.
